Raclette
Raclette is a speciality dish indigenous to Switzerland. To obtain best results
use with the original Ra-clette cheese. Use around 150–250 g for each per-
son. Cut the cheese into slices (about 2 mm thick).Boil the potatoes in their
skins and keep them warm in a covered dish, alternatively lay the cookedpo-
tatoes on the grill plate to maintain their temperature. Centre the appliance in
the middle of the
table. Place the cheese in the Raclette pans and leave on the heating
element for 3–4 minutes. Once the cheese has melted and has attained a
golden brown colour, it can then be spread across the ap-propriate prepared
dish or over the boiled potatoes. Then add a hint of freshly ground pepper.
Curedham or the Swiss speciality ‘Bündner-Fleisch’ (an air-dried meat), pick-
led onions or gherkins and a dry
wine are great accompaniments for Raclette.
